  • Mango chutney
  • ANDROS Pro Frozen Mango Dices 100g
  • ANDROS Pro Frozen Puree Mango 100% 50g
  • Lemon
  • Basil 5g
  • Raspberry sauce
  • ANDROS Pro Frozen Puree Raspberry 200g
  • Sugar 20g
  • Ginger 20g
  • Red wine sauce
  • Mango gels
  • ANDROS Pro Frozen Puree Mango 100% 240g
  • Agar powder 3g
  • Pan-fried foie gras 50g
  • Sourdough bread
  • Mixed nut crumbles
  • Gold tuile
  • Basil oil

II/ INSTRUCTION:

Heat Frozen Puree Mango 100%, Frozen Mango Dices and a bit of salt for 10 minutes. Turn off the heat, add lemon juice and thin-scliced basil. Add seasonings for light sweet and sour.

Heat Frozen Puree Raspberry, sugar and ginger to a boil. Turn off the heat, add lemon juice and leave it cool.

Heat Frozen Puree Mango 100% and agar powder to a boil. Turn off the heat, then then refrigerate for 2 hours. Blend until smooth. Keep in a container and refrigerate.
