ANDROS INGREDIENTS
I/ INGREDIENTS:
- Mango chutney
- ANDROS Pro Frozen Mango Dices 100g
- ANDROS Pro Frozen Puree Mango 100% 50g
- Lemon
- Basil 5g
- Raspberry sauce
- ANDROS Pro Frozen Puree Raspberry 200g
- Sugar 20g
- Ginger 20g
- Red wine sauce
- Mango gels
- ANDROS Pro Frozen Puree Mango 100% 240g
- Agar powder 3g
- Pan-fried foie gras 50g
- Sourdough bread
- Mixed nut crumbles
- Gold tuile
- Basil oil
II/ INSTRUCTION:
Heat Frozen Puree Mango 100%, Frozen Mango Dices and a bit of salt for 10 minutes. Turn off the heat, add lemon juice and thin-scliced basil. Add seasonings for light sweet and sour.
Heat Frozen Puree Raspberry, sugar and ginger to a boil. Turn off the heat, add lemon juice and leave it cool.
Heat Frozen Puree Mango 100% and agar powder to a boil. Turn off the heat, then then refrigerate for 2 hours. Blend until smooth. Keep in a container and refrigerate.
